A Life for Asado
Vilmar Paiva is one of the most famous Argentine Asado professionals. He was born in the province of Entre Ríos, in northeastern Argentina, and so literally absorbed rural life.
At the age of just 12, he prepared a professional asado for his school for the first time - he had to grill two cows "Con cuero" (the beef with all the hide). 400 kg of meat at 12 years old!
After school, he moved to Buenos Aires to study law at the Universidad de Buenos Aires. But he never practiced as a lawyer, only asado. And so he turned his passion into a career and a few years later initiated his platform “Asado Campero”, which in German means something like “Asado from the country”.
The platform, which has been around since October 2017, deals with the art of grilling and cooking in, on and over the fire (i.e. the typically traditional asado).
With the aim of connecting the big city with the traditions and culture of the Argentine hinterland, he was a guest at the most important gastronomic festivals in Buenos Aires, and himself organized celebrations, corporate and private events.
Highlights of his career so far: an Asado for 5,000 people and private Asados for the President of Argentina and in the former villa of football legend Diego Maradona.
His favorite way to grill is, of course, with wood. With his natural and authentic manner, Vilmar is a welcome guest on Argentine television and has already filmed over 20 episodes for the program “Cocineros Argentinos”.
In our online course he stands in front of the camera for us and shows how he grills asados. But here he is not just a grill teacher, but also introduces us to the secrets of gaucho culture and the history of Argentine asados in all its facets.
